Neotame is a derivative of the dipeptide that is comprised of two amino acids, phenylalanine and aspartic acid. It is manufactured from Aspartame (which consists of phenylalanine and aspartic acid) and 3,3-dimethylbutyaldehyde via reductive alkylation, a one step chemical synthesis, followed by purification, drying, and milling.
